How to Make Crawfish Bisque with Stuffed Heads Like Nana

Nana's Crawfish Bisque Recipe
PREP TIME: 45 minutes

INGREDIENTS - STUFFED HEADS:
2 lbs crawfish tail meat, ground or finely chopped
40-50 cleaned crawfish heads, or substitute mini bell pepper halves
1 cup yellow onion, finely minced
1/2 cup celery, finely minced
1/2 cup green bell pepper, finely minced
4 cloves garlic, minced
2 eggs, beaten
1 cup breadcrumbs
1/4 cup fresh parsley, chopped
2 tsp Cajun seasoning
1 tsp salt
1/2 tsp cayenne pepper
2 Tbsp butter, melted
INGREDIENTS - THE BISQUE:
1/2 cup vegetable oil
1/2 cup all-purpose flour - for dark roux
2 cups yellow onion, diced
1 cup celery, diced
1 cup green bell pepper, diced
4 cloves garlic, chopped
2 cans tomato sauce, 8 oz each
6 cups seafood stock or shrimp stock
2 bay leaves
1 Tbsp Cajun seasoning
1 tsp dried thyme
2 lbs crawfish tails, whole for pot
1/4 cup green onions, sliced
1/4 cup parsley, chopped
Salt + cayenne to taste
Hot cooked rice, for serving

INSTRUCTIONS - NANA’S WAY:
Step 1: Make the Stuffing
In a big bowl, mix ground crawfish tails, onion, celery, bell pepper, garlic, eggs, breadcrumbs, parsley, Cajun seasoning, salt, and cayenne. Add melted butter. Mix well. Should be moist but hold together. If too wet, add more breadcrumbs.

Step 2: Stuff the Heads
Spoon stuffing into cleaned crawfish heads or mini bell pepper halves. Pack it tight. Set on a tray. You can do this a day ahead and keep in fridge.
Step 3: Make Dark Roux - Don’t You Walk Away
Heat oil in heavy Dutch oven over medium-low. Whisk in flour. Stir CONSTANTLY 25-30 minutes until it’s dark chocolate color. If it burns, throw it out. Start over. Nana’s serious.

Step 4: Trinity Time
Add onions, celery, bell pepper to roux. Cook 10 min till soft, stirring. Add garlic, cook 1 min. Stir in tomato sauce. Cook 15 min till dark and thick.
Step 5: Build the Bisque
Slowly whisk in warm seafood stock. Add bay leaves, Cajun seasoning, thyme. Bring to boil, then reduce to simmer. Simmer 45 minutes, stirring every 10 min so it don’t stick.
Step 6: Simmer the Stuffed Heads
Gently drop stuffed heads into simmering bisque. Don’t stir hard or they’ll break. Simmer 20 min. Add whole crawfish tails last 5 minutes. They cook fast.
Step 7: Finish Fresh
Fish out bay leaves. Stir in green onions and parsley. Taste for salt and heat. Add more cayenne if PawPaw’s eating. Let sit 5 minutes. Serve over hot rice.
Nana's Kitchen Tips: Crawfish Bisque Rules
1. Dark roux or don’t bother.
If your roux ain’t the color of dark chocolate, your bisque won’t taste right. Low and slow. 25-30 minutes. Burn it and start over. No shortcuts.
2. No heads? No problem.
Can’t find crawfish heads? Use small bell pepper halves or mini sweet peppers. Stuff those instead. Same flavor, less work. Grandma’s trick.
3. Stuffing must hold together.
If your stuffing is too loose, it’ll fall out in the pot. Add breadcrumbs 1 Tbsp at a time till it sticks. Wet your hands to stuff - keeps it from sticking to you.
4. Don’t boil the stuffed heads.
Gentle simmer only. Hard boil breaks them apart and you’ll have crawfish stew, not bisque. Low and slow after you drop them in.
5. Taste at the end.
Crawfish vary in salt. Roux varies in flavor. Don’t season heavy early. Wait till the end, then add salt and cayenne. PawPaw likes his hot.
How to Serve & Store
How to Serve:
Ladle over hot long grain white rice in a shallow bowl. You want 4-5 stuffed heads per person. Serve with hot French bread to sop the gravy and a glass of sweet tea.
This is Sunday dinner. This is Good Friday. This is "company’s coming." Don’t serve it with a salad. Serve it with silence while everybody eats.

How to Store:
Store bisque and rice separate in the fridge up to 3 days. Reheat bisque low and slow on stove. Add splash of stock if thick.
To Freeze: Freeze bisque WITHOUT stuffed heads for up to 3 months. Stuffed heads get mushy frozen.
Make fresh stuffing and simmer in thawed bisque.
Thaw overnight in fridge.
