Nana's Cajun Cassoulet
Cassoulet: cass-oo-lay.

We took that white bean stew and threw in duck, andouille, tasso, and enough garlic to keep the vampires out of Ponchatoula.

Nana's Cajun Cassoulet Recipe
PREP TIME: 30 minutes + overnight bean soak
COOK TIME: 3 hours 30 minutes
TOTAL TIME: 4 hours + overnight
YIELD: Serves 8-10

INGREDIENTS:
1 lb dried Great Northern or cannellini beans, soaked overnight
2 duck legs or 4 chicken thighs
1 lb andouille sausage, sliced 1/2-inch thick
1/2 lb tasso, cubed
3 Tbsp duck fat, or bacon grease
1 large yellow onion, diced
1 stalk celery, diced
1 carrot, diced
6 cloves garlic, minced
1 can diced tomatoes, 14.5 oz, drained
4 cups chicken stock
2 bay leaves
1 Tbsp fresh thyme leaves
1 tsp smoked paprika
1/2 tsp cayenne pepper
Salt + black pepper to taste
1 cup French bread crumbs
2 Tbsp fresh parsley, chopped

INSTRUCTIONS - NANA’S WAY:
Step 1: Soak the Beans
Night before, cover beans with cold water. Soak overnight. Drain and rinse. Don’t skip or your beans stay hard.
Step 2: Brown the Meat
Heat duck fat in big Dutch oven over medium-high. Brown duck legs or chicken thighs skin-side down 6-8 min till crispy. Remove. Brown andouille and tasso 5 min. Remove. Don’t clean that pot. That’s flavor.

Step 3: The Trinity + Garlic
Add onion, celery, carrot to pot. Cook 8 min till soft. Add garlic, cook 1 min. Stir in drained tomatoes, thyme, paprika, cayenne, bay leaves. Cook 3 min.
Step 4: Simmer Low & Slow
Add beans and chicken stock. Nestle duck, andouille, and tasso back in. Liquid should just cover. Bring to boil, then reduce to bare simmer. Cover, cook 2 hours. Stir gently once an hour.

Step 5: The Crust - Don’t Rush It
Uncover. Taste for salt. Simmer 30 min more till beans are creamy. Heat broiler. Sprinkle bread crumbs on top. Broil 3-4 min till golden and crusty. That crust is law.
Step 6: Rest & Serve
Let sit 15 min. Fish out bay leaves. Garnish with parsley. Serve hot with French bread and green salad.
Nana's Kitchen Tips: Cajun Cassoulet
1. Duck fat is not optional.
If you ain’t got duck fat, use bacon grease. If you use olive oil, Nana’s gonna know. Duck fat makes it rich. That’s what separates it from regular bean soup.

2. The crust makes it cass-oo-lay.
After 2.5 hours, you NEED that breadcrumb crust. Broil it till golden. Break it and stir it in, then let another crust form if you got time. Three crusts = fancy French grandma status.
3. It’s better next day.
Make it Saturday, eat it Sunday. Beans soak up all that andouille and duck flavor overnight. Reheat low and slow. Don’t microwave or you ruin the crust.
How to Serve & Store
How to Serve:
Ladle into wide bowls. One duck leg per person if you can. Make sure everybody gets andouille AND tasso. Serve with crusty French bread to swipe the plate and a simple green salad with vinegar. No rice. This is French-Cajun, not gumbo.

How to Store:
Fridge 4 days in covered pot. It gets better every day. Reheat on stove low, add splash of stock if dry.
To Freeze:
Freeze WITHOUT breadcrumbs up to 3 months.
Thaw overnight, reheat, then add fresh crumbs and broil.
Crust don’t freeze right.
