Ingredients — The Filling

1/2 cup yellow onion, finely diced

Step 1: Make the filling. Melt the butter in a 12-inch cast iron skillet over medium heat — cast iron holds even heat, which matters for how the trinity cooks down. Add the onion, celery, and bell pepper. Cook 8–10 minutes until soft. That's the Holy Trinity. Add the garlic and cook 1 minute more.

Step 2: Thicken the gravy. Sprinkle the flour over the trinity. Stir and cook 2 minutes. Slowly pour in the heavy cream and stock, whisking as you go. Add the tomato paste, Cajun seasoning, thyme, and cayenne. Bring to a gentle simmer and cook 5 minutes until thick like gravy.

Step 3: Add the crawfish. Stir in the crawfish tails with fat. Simmer 5 minutes — don't overcook, or they'll turn rubbery. Turn off the heat and stir in the green onions and parsley. Taste for salt and pepper. Let the filling cool 15 minutes; hot filling makes a soggy crust.
