This Lemonade Crisp Topping came from the church cookbook, 1994. Nana showed up to church potluck with apple crisp. Mama said “Tee, this topping tastes like summer.” Nana winked. “Dry lemonade mix, Mama. Sugar + lemon + secret.”
It’s oats, flour, brown sugar, butter, and 2 tablespoons dry lemonade mix. That’s it. The lemonade keeps it from tasting like cardboard. Makes it bright. Makes Pawpaw eat 3 helpings and ask “what’s in this?”
Nana mixes a triple batch. Freezes in quart bags. When farmers market apples go on sale, when pears fall off the neighbor’s tree, when Pawpaw wants peach crisp in January – Nana’s ready. Just dump fruit in pan, top with frozen crumbs, bake.

Nana’s Lemonade Crisp Topping Recipe
PREP TIME: 10 minutes
FREEZE TIME: 3 months
TOTAL TIME: 10 minutes
YIELD: 4 crisps – 8x8 pans
INGREDIENTS – Triple Batch for Freezer:
- 3 cups old-fashioned oats – not quick oats
- 2 1/4 cups all-purpose flour
- 1 1/2 cups packed brown sugar – light or dark
- 6 Tbsp dry lemonade mix – Country Time or store brand. Not pink lemonade
- 1 1/2 tsp ground cinnamon
- 3/4 tsp salt
- 1 1/2 cups cold salted butter – 3 sticks, cubed
INSTRUCTIONS:
Step 1: Mix Dry Stuff
In HUGE bowl, whisk 3 cups oats, 2 1/4 cups flour, 1 1/2 cups brown sugar, 6 Tbsp dry lemonade mix, 1 1/2 tsp cinnamon, 3/4 tsp salt. Nana uses her turkey roasting pan as a bowl. No judgment.
Step 2: Cut in Butter – Nana’s Arm Workout
Add 1 1/2 cups cold cubed butter. Use pastry cutter or two forks or Nana’s clean hands (Aunt Lois would be so proud!) Cut till mixture looks like wet sand with pea-size butter chunks. Don’t overwork. Chunks = crispy.
Step 3: Freeze in Bags – Nana’s System
Divide into 4 quart freezer bags. About 2 1/2 cups per bag. Label: “Lemonade Crisp – Use on 6 cups fruit.” Freeze flat. Lasts 3 months. Don’t thaw before using.
Step 4: Use It – The Easy Part
For 8x8 crisp: Toss 6 cups sliced fruit with 1/4 cup sugar + 2 Tbsp flour + 1 tsp cinnamon. Pour in greased 8x8 pan. Dump 1 frozen bag topping over. Don’t stir. Bake 350°F for 45-50 min till bubbly and golden. Serve warm. Ice cream mandatory.

6 cups sliced, peel on or off. Honeycrisp or Gala

6 cups sliced. Bartlett. Add 1 Tbsp lemon juice to fruit

6 cups sliced. Fresh or frozen. Drain if frozen

Berries
5 cups. Add 3 Tbsp cornstarch to fruit. Juicy.

Plums
6 cups quartered. Add 1/4 tsp almond extract to fruit

Nana’s Fixes
Topping too dry
You used quick oats. Or not enough butter. Nana’s 3 sticks is correct.
Topping soggy
Fruit was too wet. Toss with 2 Tbsp flour before topping. Or bake 10 min longer.
Too sweet
Use pink lemonade mix by accident? It’s sweeter. Use yellow only. Or cut brown sugar to 1 1/4 cups.
Can’t find lemonade mix
Use 1/4 cup powdered sugar + 2 tsp lemon zest + 1/4 tsp citric acid. But mix is easier.
When Nana Uses Her Freezer Topping
*September:* Farmers market apple haul. Make 2 apple crisps. Freeze 2 bags topping.*
October: Neighbor’s pear tree drops. Pear crisp for church.
*November:* Thanksgiving. Make 2 crisps – apple + cranberry.
January: Pawpaw wants “warm fruit.” Frozen peaches + topping from freezer. Grandma win.
`Emergency: Surprise company. Toss frozen berries + topping. 50 min later = hero.
