INGREDIENTS:
- 4 lbs apples – about 10-12 medium. Nana uses mix: 2 lbs Gala + 2 lbs Granny Smith
- 1 cup brown sugar – packed. Light or dark
- 1/2 cup granulated sugar
- 1 Tbsp ground cinnamon
- 1/2 tsp ground cloves – Miss Betty’s secret
- 1/4 tsp ground allspice
- 1/4 tsp salt
- 1 tsp vanilla extract – add at end
- Optional: 2 Tbsp lemon juice if apples are super sweet
INSTRUCTIONS:
Step 1: Peel, Core, Chop – Nana’s Only Work
Peel, core, and chop 4 lbs apples into 1-inch chunks. Don’t stress perfect. They’re gonna cook to mush. Nana uses this apple peeler-corer-slicer from Amazon. Done in 5 minutes. Toss in 6-quart slow cooker.
Step 2: Dump Everything But Vanilla
Add 1 cup brown sugar, 1/2 cup white sugar, 1 Tbsp cinnamon, 1/2 tsp cloves, 1/4 tsp allspice, 1/4 tsp salt to apples. Stir. Lid on. Cook LOW 10 hours or HIGH 5 hours. Nana does LOW overnight. House smells like heaven at 6am.
Step 3: Blend Smooth – Nana’s Trick
After 10 hours, apples are dark and soft. Turn off. Add 1 tsp vanilla. Use this immersion blender RIGHT IN CROCK till smooth like baby food. No blender? Mash with potato masher for chunky style. Nana likes smooth.
Step 4: Thicken – The Important Part
Lid OFF. Cook on HIGH 1-2 more hours, stirring every 30 min. This cooks off water. Nana’s test: Spoon on plate. If no watery ring forms around it in 1 minute, it’s done. Should mound on spoon.
Step 5: Jar It Up for Gifts
Ladle hot apple butter into 6 clean half-pint jars. Leave 1/4 inch headspace. Wipe rims. Add lids. For shelf-stable: Water bath 10 minutes. For fridge: Cool, lid, fridge 3 weeks. For freezer: Cool, freeze 6 months.

Too thin after 10 hours
You skipped Step 4. Lid OFF and cook 1-2 hours more. It thickens as water steams out.
Too tart
Add 1/4 cup more brown sugar. Or use all Gala apples next time. Granny Smith = tart.
Burned on edges
Slow cooker runs hot. Stir once at 5 hour mark. Or cook on LOW only, never HIGH.
Not dark enough
Cook longer. Real apple butter is dark mahogany, not applesauce color. Be patient.
No immersion blender
Transfer in batches to regular blender. Careful – it’s hot. Or mash chunky. Sister Helen liked chunky.
