Nana's Hot Cheesy Crab Dip — The One That Never Makes It Home!

Y'all, if you need a dip that'll make folks hover around the kitchen and not leave? This is it.

This is not that cold, mayo-heavy crab dip from the deli. No ma'am. This one goes in the oven and comes out bubbly, browned on top, cheesy, and loaded with lump crab. Or you can throw it in the slow cooker when you got company and need to keep it warm while folks graze.

My secret? That little bit of grated white onion, fresh lemon, and a few shakes of Tabasco. And Lawry's Seasoned Salt — don't skip it! It seasons that cream cheese just right.

What You'll Need

8 ounce package cream cheese or Neufchâtel (light cream cheese), softened

1/2 cup mayonnaise (Nana Loves Duke's!)

1/2 cup light or regular sour cream

1 cup shredded sharp cheddar cheese

1 tablespoon grated white onion (grate it on the little holes, you want juice!)

12 ounces lump crab meat, from 2 6-ounce cans, drained and picked

1 teaspoon all-purpose seasoning salt — I use Lawry's Seasoned Salt

1/2 teaspoon Worcestershire sauce

1/2 lemon, juiced

2 tablespoons finely chopped Italian parsley

A few shakes of Tabasco, to taste

Freshly ground black pepper, to taste

Crackers, baguette slices, or tortilla chips for serving

How Nana Makes It

Oven Directions (My Favorite)

1. Preheat: Get that oven to 350°F. Lightly grease a small baking dish — 8x8 works fine.

2. Cream It: In a medium mixing bowl, put your softened cream cheese, mayonnaise, and sour cream and stir till it's nice and creamy. No lumps! Let that cream cheese sit out 30 minutes before — it'll save your arm.

3. Mix It Up: Add the cheddar cheese, grated white onion, crab meat, Lawry's, Worcestershire, lemon juice, parsley, Tabasco, and black pepper. Stir again until well combined. Fold gentle so you keep some of those pretty crab lumps — don't mush it!

4. Bake It: Transfer to your baking dish. Bake 25 to 30 minutes until browned and bubbly around the edges. Ohhh when you see it bubbling — that's when you know!

Serve right away with crackers, toasted baguette slices, or tortilla chips.

Slow Cooker Instructions (For Parties & Game Day)

Add all the ingredients to a small 3- to 4-quart slow cooker, stir to combine, and set it on LOW for 2 hours. It needs to cook until the cream cheese melts completely. Stir the dip and then let it cook an additional 15 to 20 minutes.

It'll keep beautiful for up to an hour on KEEP WARM or LOW. Just stir it occasionally so it don't burn or separate on you.

Nana's Tips

Pick your crab, cher! Even canned lump can have shell. Spread it on a plate and run your fingers through.

Drain good: Pat your crab meat lightly with a paper towel — watery dip is no fun.

White onion matters: Grate it, don't chop it. You want that flavor without crunch.

Don't over-salt: Lawry's, Worcestershire, Tabasco, and cheddar already have salt. Taste before you add more.

Make-ahead: Mix it in the morning, keep in fridge, bake when company comes. Add 5 minutes to bake time if cold from fridge.

If you boiled your own crabs at home — remember they're already seasoned! Go light on that Lawry's and taste first, like we talked about with the linguine.

How to Serve & Store

Serve it with that crusty French bread you had with the linguine, or my favorite — those little buttery round crackers. And keep a spoon nearby — somebody always wants to eat it straight!

Store: Cool completely, then cover and refrigerate leftovers in an airtight container up to 3 days.

Reheat: Warm gently in a 300°F oven until heated through, about 15 minutes, or in the microwave in 30-second bursts, stirring between each. Don't blast it on high — the cream cheese will separate.

Freeze: Not recommended. Cream cheese and sour cream-based dips break and turn grainy once thawed.

Make ahead: Mix everything the morning of, cover, and refrigerate unbaked. Bake straight from the fridge, adding about 5 extra minutes to the bake time.
