1 lb small shrimp, peeled and deveined
4 cups water
3 Tbsp Zatarain's Crawfish, Shrimp & Crab Boil — the liquid
1 lemon, halved
1 bay leaf

16 oz cream cheese, softened to room temp — don't you dare microwave it
1/2 cup mayonnaise, Duke's if you got it
1/2 cup sour cream
1 cup of the boiled shrimp, chopped rough — save the rest for gumbo
3/4 cup green onions, thinly sliced, whites and greens both
2 cloves garlic, minced fine, or 1/2 tsp garlic powder
2 Tbsp fresh parsley, chopped
1 Tbsp fresh lemon juice
1–2 tsp Tabasco — start with 1, taste, then add more if you like it hot
1 tsp Worcestershire sauce
1 tsp Zatarain's Creole Seasoning, or Tony's if that's what's in your cabinet
1/2 tsp smoked paprika
1/4 tsp cayenne, optional for extra kick
Salt and black pepper, to taste

Instructions

Step 1: Boil the shrimp right. Bring the water, Zatarain's, lemon halves, and bay leaf to a rolling boil. Drop the shrimp in and cook 2–3 minutes until just pink — the second they curl into a C, they're done. Drain and shock in ice water to stop the cooking. Drain again, pat dry, and chop. Don't overcook, or you'll have rubber.

Step 2: Beat the base. In a big bowl, beat the cream cheese with a hand mixer until smooth and fluffy, about 2 minutes. Scrape the bowl. Add the mayo and sour cream, then beat 1 more minute until there are no lumps.

Step 3: Mix it up. Fold in the chopped shrimp, green onions, garlic, parsley, lemon juice, Tabasco, Worcestershire, Creole seasoning, smoked paprika, and cayenne. Stir until everything's friends. Taste it — add salt, pepper, or more Tabasco if needed.

Step 4: Chill, sha. Cover and refrigerate at least 1 hour. Overnight is better — the flavors get to know each other.
