CAJUN DIRTY RICE RECIPE
Makes: 6 servings | Prep: 10 min | Cook: 20 min
Ingredients:
- 1 lb ground beef
- 1 lb ground pork
-1 package chicken livers, chopped
- 1 cup chopped onion
- 1/2 cup chopped green bell pepper
- 1/2 cup chopped celery
- 2 cloves garlic, minced
- 2 cups cooked long grain rice
- 1 Tbsp Cajun seasoning
- 1 tsp salt
- 1/2 tsp black pepper
- 2 green onions, sliced
- 2 Tbsp parsley, chopped
Instructions:
1. **BROWN MEAT** - Heat Lodge cast iron on medium-high. Add beef + pork + livers. Break it up with wooden spatula. Cook until brown.
2. **ADD TRINITY** - Use Fullstar chopper for onion, bell pepper, celery. Add to skillet. Cook 5 min until soft.
3. **SEASON** - Add garlic, Cajun seasoning, salt, pepper. Stir with wooden spatula and scrape up all the bits.
4. **ADD RICE** - Stir in cooked rice. Let it sit 2 minutes to get a little crust. Then stir.
5. **FINISH** - Top with green onions and parsley. Serve hot.
NANATEE’S “DON’T MESS IT UP” WARNING
I’ve had ladies tell me “Mine was mushy.”

**Used wet rice** | Mushy dirty rice
**Use day-old or cooled rice**
**Stirred too much** | No crust
**Let it sit 2 min** before stirring
**Chopped by hand** | Big chunks, uneven cook
**Use vegetable chopper** for even pieces
