Ingredients
1 lb ground beef
1 lb ground pork
1 package chicken livers, chopped
1 cup chopped onion
1/2 cup chopped green bell pepper
1/2 cup chopped celery
2 cloves garlic, minced
2 cups cooked long-grain rice (day-old or cooled — see Nana's tips below)
1 tbsp Cajun seasoning
1 tsp salt
1/2 tsp black pepper
2 green onions, sliced
2 tbsp parsley, chopped
Instructions
Step 1: Brown the meat. Heat a 12-inch Lodge cast iron skillet over medium-high heat. Add the beef, pork, and livers, and break it up with a wooden spatula. Cook until browned all the way through — meat should reach an internal temperature of 165°F.
Step 2: Add the trinity. Chop the onion, bell pepper, and celery — a vegetable chopper gets you even pieces in seconds, which matters for how evenly everything cooks. Add to the skillet and cook 5 minutes until soft.
Step 3: Season. Add the garlic, Cajun seasoning, salt, and pepper. Stir with the wooden spatula, scraping up the browned bits from the bottom of the pan — that's where the flavor lives.
Step 4: Add the rice. Stir in the cooked rice. Let it sit undisturbed for 2 minutes to build a little crust on the bottom, then stir it through.
Step 5: Finish. Top with the green onions and parsley. Serve hot.
