This recipe was paperclipped in my church cookbook between the funeral potatoes and the divorce casserole. It said “Jiffy Cornbread Mix + Bisquick + Frozen Blueberries = 18 muffins.” Nana said “Amen.”
Pawpaw brings home 10lbs of U-Pick blueberries from the Abita Springs market every July. By day 3, the grands are sick of eating them by the handful. But warm blueberry muffins? The grands will be hiding them in their stuff for the trip home.
No measuring flour. No creaming butter. No mixer. Just dump, stir, bake. You get bakery-dome tops with sugar crystals and berries that burst like little flavor bombs.

Why Nana’s Muffin Hack Beats Every Bakery
*1. 30 minutes start to finish:* Nana can make these before Pawpaw finishes his first cup of Folgers.
*2. No measuring flour:* Jiffy + Bisquick = leavening + flour already done. Nana’s not cleaning up flour dust at 6am.
*3. 18 muffins:* That’s 2 for each of my 7 grands + 4 for Pawpaw=Nana math.
*4. Frozen berries work:* U-Pick season ends in July. Nana uses frozen all year and nobody knows.
*5. Freezer friendly:* Bake, cool, freeze. Microwave 20 seconds. Taste like you just baked ‘em.
Nana’s Blueberry Muffins Recipe
PREP TIME: 10 minutes
COOK TIME: 18-20 minutes
TOTAL TIME: 30 minutes
YIELD: 18 standard muffins
Shop Nana’s Blueberry Baking Essentials
INGREDIENTS:
- 1 box Jiffy Corn Muffin Mix – 8.5 oz box
- 2 cups Bisquick baking mix
- 2/3 cup sugar + 2 Tbsp for sprinkling tops
- 2 large eggs
- 1 cup milk – Nana uses whole milk
- 1/3 cup vegetable oil – or melted Butter Crisco for taller muffins
- 1 tsp vanilla extract
- 1 tsp lemon zest – optional but Nana says do it
- 2 cups frozen blueberries – do NOT thaw. Fresh work too
- 2 Tbsp flour – for tossing berries
INSTRUCTIONS:
Step 1: Prep
Preheat oven to 400°F. Line 18 muffin cups with paper liners or spray good.
Step 2: Dry Mix
In a LARGE bowl, dump 1 box Jiffy Mix + 2 cups Bisquick + 2/3 cup sugar. Whisk with a fork. No sifter needed.
Step 3: Wet Mix
In a 2-cup measuring cup, beat 2 eggs. Add 1 cup milk, 1/3 cup oil, 1 tsp vanilla, 1 tsp lemon zest. Stir.
Step 4: Combine – Nana’s Rule
Pour wet into dry. Stir 10 times with a wooden spoon. Batter will be lumpy. LUMPY = tender muffins. Smooth batter = hockey pucks. Put the spoon down, sha.
Step 5: Berry Trick
Toss 2 cups frozen blueberries with 2 Tbsp flour in a bowl. This stops them from sinking and turning your batter purple. Fold berries into batter. 3 folds max. Some streaking is fine.
Step 6: Scoop + Bake
Fill muffin cups 3/4 full – Nana uses an ice cream scoop. Sprinkle tops with remaining 2 Tbsp sugar for that bakery crunch. Bake 18-20 min till tops are golden and toothpick has a few moist crumbs.
Step 7: Cool
Let sit in pan 5 min. Move to rack. Try not to burn your tongue eating one hot. Nana fails this step every time.
Nana’s Fixes + Shortcuts
Tough muffins
You stirred too much. 10 stirs max. Walk away from the bowl.
Blue batter
You thawed frozen berries. Use them frozen. Or rinse fresh berries and pat DRY.
Flat tops
Oven wasn’t hot enough. 400°F matters. Or your baking powder was old.
Berries all at bottom
Forgot to toss in flour. Or your batter was too thin – add 2 Tbsp Bisquick next time.
Only have 12-cup pan
Fill 12, bake. Keep leftover batter in fridge. Bake round 2 when first batch is out.
No Bisquick
Use 2 cups flour + 1 Tbsp baking powder + 1 tsp salt + 2 Tbsp cold butter cut in. But Nana keeps Bisquick for emergencies.
How to Store + Freeze
`Counter: 3 days in airtight container. Put paper towel under + over muffins to keep tops from getting sticky.*
`Fridge: 1 week, but they dry out. Nana only does this in August heat.
`Freezer: Cool completely. Freeze in gallon bag 3 months. Microwave 20 seconds from frozen. Or pack frozen in Pawpaw’s lunchbox – thawed by 10am snack.
`Nana's Hack: Make 4 batches in September. Freeze.

*School Morning:* 2 muffins + banana. Kids fed before bus
Sunday Brunch: Warm with butter + Nana’s Chilled Blueberry Soup =Fancy but easy.
*Church Potluck:* Bring basket with cloth napkin. Watch them disappear before casserole.
