1. **1 Hour** - 3.5 minutes per pound. Done.
2. **Juicy** - Oil seals it in. No dry breast meat.

CAJUN FRIED TURKEY RECIPE

Makes: 10-12 servings | Prep: 15 min + 12hr marinate | Cook: 1 hour

Ingredients:
- 12-14 lb turkey, thawed completely, patted DRY
- 1 jar Louisiana Cajun Butter Marinade
- 1/2 cup Tony Chachere’s Creole Seasoning
- 1 Tbsp Spicy World Cayenne Pepper
- 3-4 gallons peanut oil

Instructions:

1. **INJECT** - Use injector kit. Inject Cajun Butter all over breast, thighs, legs. About 1oz per spot.
2. **SEASON** - Mix Tony’s + cayenne. Rub all over outside + under skin.
3. **MARINATE** - Refrigerate 12-24 hours.
4. **HEAT OIL** - Outside on concrete. Fill fryer pot so turkey is covered by 2 inches. Heat to 350°F.
5. **LOWER SLOWLY** - Use fryer hook. Lower turkey SLOW into oil. It will bubble.
6. **FRY** - 3.5 minutes per pound. 14lb turkey = 49 minutes.
7. **CHECK TEMP** - 165°F in breast. Lift with hook. Let drain on rack.
8. **REST 20 MIN** - Then carve.

**Do water test first** to measure oil

**Concrete only, 10ft from house**
