The Cast Iron Skillet Grandma Laura Used for 76 Years (And Why Papa Nick Couldn’t Replace It)
Grandma Laura would have said “Teflon don’t make cornbread right,” & would have thrown that pan in the bayou. “And it sure don’t fry garfish patties.” 76 years. Same 12-inch cast iron skillet. 9 kids. Thousands of garfish patties.
That skillet’s still in my kitchen.
**Why Every Cajun Nana Needs Cast Iron – Daddy’s 3 Rules**
1. Even Heat = No Soggy Middlers** Garfish patties are thick. Teflon gives you burnt outside, raw inside. Cast iron heats even. Every patty golden brown, cooked through. Mama fed church on this skillet. No complaints.
2. Sear = Flavor You Can’t Fake** That crust on garfish patties? The blackened edge on redfish? The crispy bottom on cornbread? Only cast iron does that. It’s called the Maillard reaction. Mama called it “flavor.” Pawpaw’s nonstick made food gray. Mama’s cast iron made food.
3. One Pan, 50 Years, 5 Cents a Year** Mama got her skillet as a wedding gift in 1967. She died in 2022. I’m still using it. $34 today ÷ 50 years = 68¢ per year. Teflon pan: $20, lasts 2 years = $10 per year. Nana’s math wins.
**What Happens If You Don’t Use Cast Iron:**
1. **Garfish patties stick** – You flip too early. They tear. Oil splatters. Dog hides.
2. **Cornbread is pale** – No crispy bottom = not Cajun. Mama would judge you.
3. **You buy pans forever** – Teflon scratches. Throw away. Buy again. Mama’s skillet = one and done.
**How to Keep It 76 Years Like Mama:**
1. **Don’t wash with soap** – Mama used salt + oil. I use hot water + chainmail scrubber. [Nana’s scrubber pick]
2. **Dry on stove** – Water = rust. Mama put hers on low burner 2 min after washing.
3. **Oil it** – Thin coat of Crisco after drying. Mama used bacon grease.
4. **Cook bacon first** – New skillet? Fry 1 lb bacon. Instant seasoning. Mama’s trick.
**Don’t buy if:** You enjoy replacing pans every 2 years and eating pale cornbread.
**Nana’s Promise:** Fry Mama’s garfish patties in this skillet. They'll come out crispy with zero stick.
