Nana found it scotch-taped in the 1983 church cookbook under “Emergency Sides.” Sister Helen brought it to every funeral, potluck and VBS. When Nana asked for the recipe, Sister Helen said “Honey, you just dump and run.”
Pawpaw hated beets for 40 years. Tried these at a covered dish supper and ate the whole bowl. “Tastes like a salad bar,” he said. High praise from a meat-and-potatoes man.
You need a side dish in 5 minutes? You got company coming and forgot? You got beets in the pantry from 2019? This is your recipe.

Why Sweet & Sour Beets is Nana’s Emergency Side
`1. 2 ingredients: Canned sliced beets + bottled French dressing. If Nana can count it on one hand, she’s making it.*
`2. 5 minutes: Open, drain, pour, stir. Faster than Pawpaw changes the channel.
`3. No cooking: Zero stove, zero oven, zero stress. Perfect for Louisiana summer when it’s 97° outside.
`4. Make ahead: Tastes BETTER after 2 hours in the fridge. Nana makes it before church. Serves it after.
`5. Church lady approved: Sweet, tangy, cold. Goes with fried chicken, ham, meatloaf or eaten straight from the bowl at midnight.
Nana’s 2-Ingredient Sweet & Sour Beets Recipe

PREP TIME: 5 minutes
CHILL TIME: 1 hour minimum
TOTAL TIME: 1 hour 5 minutes

INGREDIENTS:
- 1 can sliced beets – 15 oz, drained. Nana uses Libby’s
- 1/2 cup French dressing – Nana uses Kraft. Not “light” – full sugar, full fat
- Optional: 2 Tbsp chopped green onions or dried chives for garnish. Makes it look like you tried
INSTRUCTIONS:
Step 1: Drain Beets – Don’t Skip
Open 15 oz can sliced beets. Drain juice in sink. Nana saves the juice for her “pink eggs” but you don’t have to. If you don’t drain, your dressing gets watery. Sister Helen would judge.
Step 2: Dump & Stir
Put drained beets in bowl. Pour 1/2 cup French dressing over. Stir gently so you don’t break the slices. You want them pretty.
Step 3: Chill – Hardest Part
Cover. Fridge 1 hour minimum. Overnight is best. The beets soak up that sweet-tangy dressing and turn into candy. Nana makes it Saturday night for Sunday dinner.
Step 4: Garnish & Serve Cold
Sprinkle chopped green onions or dried chives on top right before serving. Makes it look like you’re fancy. Serve cold with a slotted spoon.
Nana’s Rules for Sweet & Sour Beets
Can I use fresh beets?
You can, but then it ain’t 5 minutes. Boil 3 lbs beets first. Nana uses canned for emergencies.
French dressing or Catalina?
French is classic. Catalina works – it’s spicier. Thousand Island works if you’re desperate. Russian dressing = no.
Can I add onions?
Sister Helen adds thin sliced red onion. Nana adds green onions. Pawpaw says “no onions.” You decide.
Too sweet?
Add 1 Tbsp apple cider vinegar. Or use less dressing – start with 1/3 cup.
How long does it last?
5 days in fridge covered. Gets better Day 2. Never made it past Day 3 at Nana’s house.
When Nana Serves Sweet & Sour Beets
*Funeral:* Goes with ham and potato salad. Brings comfort. No one cries over beets.*
Tuesday Night: Pawpaw grills pork chops. Nana opens pantry. Dinner’s done.
Potluck:* Brings in glass bowl with lid. Labels it “Sister Helen’s Beets.” Church ladies nod.
